Ingredients

12 oz Via Emilia Organic Riced Cauliflower
2 tbsp ghee (or grassfed butter)
2 green onion stalks - sliced and white and green parts separated
28 grams of minced garlic
1 large egg
2 tbsp soy sauce
1 tsp sesame oil
Tips
Other yummy add ins (but this will change your nutritional info) would be jalapenos, peas, corn, carrots, pineapple, ginger, etc.) Make it your own!
Directions
In a large heavy skillet or wok, melt ghee over medium-high heat. Add riced cauliflower and cook, stirring occasionally, until cauliflower starts to soften - about 5 minutes. Add in the white part of the green onions and cook until vegetables are almost tender (about 3 minutes). Add the garlic and cook for 1 minute.
Pour in the egg and stir it together with the vegetables. Cook, stirring the mixture frequently, until the egg is scrambled. This takes about 1-2 minutes. Stir in the soy sauce, green part of green onions, and the sesame oil. Taste and adjust seasoning to your liking.
