Introduction
Many of the green bean casseroles I found were the same old boring beans and mushroom soup. I thought I would try something different. It got raves. Ingredients

2 tbsp unsalted butter
2 tbsp all purpose flour
1 tsp salt
1 tsp granulated white sugar
1/2 cup onion, diced
1/2 cup red bell pepper, diced
1 cup diced Baby Bella mushrooms
1 cup fat free sour cream
3-14.5 oz cans of French style green beans
2 cup shredded cheddar cheese
15 round buttery crackers (like Ritz crackers), cruched
1 tbsp unsalted butter
1 lb well cooked bacon, crumbled
Directions
1. Cook bacon until it's crisp. I cut the bacon into smaller pieces to make it cook faster.
2. In the same pot (after draining bacon fat) melt 2 tablespoons of unsalted butter. Stir in flour until smooth and cook for one minute over medium heat. Stir in the salt, sugar, onion, bell pepper, mushrooms and sour cream. Salt and pepper to taste. Mix well.
3. Add the green beans and half of the bacon. Stir to coat the beans well.
4. Transfer the mixture to a 2 1/2 quart casserole dish. Spread cheese and remaining bacon over the top.
5. In a small bowl melt 1 tablespoon of butter. Toss the cracker crumbs and butter and then sprinkle over the top of the cheese.
5. Bake for 30 minutes in preheated oven or until the top is golden and the cheese is bubbly.
