Ingredients

    1 tbsp Olive Oil
    6 medium (4-1/8" long) Scallions, raw
    2 clove Garlic
    74 gram(s) bell pepper, red, sweet, raw
    2 cup, chopped or diced Broccoli, fresh
    5 muffin Whole Wheat English Muffin
    2.25 cup Cheddar Cheese fat free Kraft Shredded
    8 large Egg, fresh, whole, raw
    2 cup Milk, nonfat (skim milk)
    6 tsp Dijon Mustard (Great Value)
    .5 tsp Hot Pepper Sauce
    1 tsp Salt
    1 tsp Pepper, black

Directions

1 - In a large skillet over medium-high heat, warm oil. Add white and light green chopped portion of scallions; sprinkle with salt and saute until tender--about 2 minutes. Add minced garlic, finely chopped bell pepper and finely chopped broccoli. Cook, stirring often, until all vegetables are tender, about 5 minutes. Transfer to a bowl and season with salt and pepper.
2. - Mist a 13 x 9 inch baking dish with cooking spray. Arrange toasted, quartered English muffin pieces on bottom of dish, cut sides up. Scatter vegetable mixture over muffins and sprinkle with 2 cups of cheese.
3. In a large bowl, whisk eggs. milk, mustard and hot sauce (if desired) together. Season generously with salt and pepper. Pour egg mixture evenly over mixture in baking dish. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
4. Let strata stand at room temperature for 30 minutes before baking. Preheat oven to 375 degrees; line a large rimmed baking sheet with foil. Remove plastic wrap from baking dish and cover with foil. place on baking sheet and bake for 30 minutes. Remove foil; sprinkle with remaining 1/2 cup cheese; bake until golden and just set in center; 20-30 minutes longer. Let stand on wire rack for 10 minutes before serving.
