Number of Servings: 4


    Chicken Thigh, 4 thigh, bone and skin removed
    balsamic vinegar, .5 tablespoon
    Garlic, 1 tsp
    Lemon juice, 1 tbsp
    Pepper, black, .25 tsp
    White Wine, 4 fl oz
    Rosemary, 1.5 tsp
    Hunt's 100% natural fire roasted diced tomatoes 1.75 cup
    Carrots, raw, .5 cup, chopped
    Onions, raw, .5 cup, chopped


Place chicken, carrots, and onions in slow cooker.
Mix vinegar, garlic, lemon juice, salt, pepper and wine. Pour over chicken.
Cover. Cook on low for 6 hours or high for 3 hours.
1 hour before end time, stir in rosemary and tomato.

    I haven't made this yet, but I'm removing the lemon doesn't seem to go..and instead of diced tomatoes I'm using a can of paste and one small can of crushed might thicken up the sauce a bit....I'm also adding some green and sweet red peppers .... - 6/6/10

  • It was good, but not one of our favorites. Sauce was thin/soupy, so I thickened it a little with cornstarch. Used bread to soak up the juices since it wasn't served over pasta or rice. - 2/25/09
