Introduction

We typically have leftovers when we have steak so I use it the next day for strogonoff. I tweaked another recipe to make it lower fat and I can't really tell a difference. You could always start w/ raw steak and slice and cook before following the rest of the recipe. We typically have leftovers when we have steak so I use it the next day for strogonoff. Ingredients

    11 Oz sliced, leftover steak
    1 T Olive oil
    1 medium onion
    1/2 cup mushrooms, canned or fresh are OK.
    1 cup beef broth
    1 T dijon Mustard
    1/2 cup plain, fat free yogurt

Directions

Slice onion thinly and saute in the 1 T olive oil. Add mushrooms and beef broth (if using fresh mushrooms, you may want to saute them with the onion a bit first), and cook 5-10 min., until the liquid thickens a bit. Stir in mustard and beef and simmer about 5 min. until everything is heated thru. Remove from heat, stir in the yogurt and serve over rice or noodles.
