Ingredients

    4 peaches, sliced
    juice of 1/2 a lemon
    1 tbsp brown sugar
    1 tbsp minced fresh ginger root
    2 oz brie cheese

Directions

Place sliced peaches in a large microwavable bowl. Sprinkle with brown sugar, lemon juice, and ginger root. Mix well. Cook on high in microwave for 2 minutes, or until brown sugar dissolves. Let cool. When ready to serve, spoon salad into 4 small bowls, and top each with half an ounce of brie. Makes 4 1-cup servings.

    Just made this, the only thing I would caution people about is that the peaches must be thinly sliced. I think my slices were a bit too heavy for my ancient microwave!! Other than adding a few minutes to the cook time, it was wonderful!! - 7/21/08
