Ingredients

    2 cup Asparagus, fresh
    1 tbsp chopped Shallots
    1 tbsp Extra Virgin Olive Oil
    5 serving Cherry Tomatoes, Fresh, 1 Tomato
    .5 fl oz White Wine
    .1 cup (8 fl oz) Chicken Broth
    .1 fl oz Lemon Juice

Tips

Can omit chicken broth to make it vegan if you like. Thsi would also be an excellent topping for pasta or rice.

Save the asparagus stems for the freezer to make a tasty broth for your next batch of soup!


Directions

Sautee together on low heat.
