Introduction
I found this recipe on the podcast "The Easy Vegan," I did have to make some changes though. I used a little spenda to curb the calories without changing the taste and unfortunately I have not found a a healthy vegan margarine. Ingredients

Flaxseed, 3 tbsp
Flour, white, .5 cup
Wheat flour, white, bread, enriched, .5 cup
Quaker Oats Old Fashioned, 1 cup
SunMaid Zante Currants, 0.5 cup
Semi-Sweet Chocolate Chips, 15 gram(s)
Granulated Sugar, .25 cup
Splenda, 24 tsp
Organic Easy Spread Peanut Butter, 12 tbsp
Butter, salted, .5 cup
Vanilla Extract, .5 tsp
Directions
Grind flaxseed. Add 5 tbs., stir together and let sit while mixing other ingredients.
Preheat Oven to 375 degrees
Combine all dry ingredients.
Add wet ingredients to dry ingredients.
Stir together until there are no visible clumps of margarine or flour.
Scoop out dough and lay out on cookie sheets.
Cook for 7-2 minutes, or until they look less "slimy"
These cookies do not rise, they solidify. Which is perfect!
