Ingredients

    448 grams Zucchini
    1 1tsp Olive Oil
    1 cup, chopped Onions, raw
    1 fruit without skin and seeds Avocados, California (Haas)
    1 cup Brown Rice, medium grain
    16 oz Turkey, Ground turkey, 93% lean
    6 serving Old El Paso Red Enchilada Sauce- 1/4 cup (by LETTERSTODES)

Directions

1. Heat a medium large skillet to medium high heat.
2. Add olive oil and onions to the pan. Sauté until translucent or soft, about 2-3 minutes.
3. Add in the ground turkey. Cook until there is no more pink in the meat, breaking up meat into small pieces along the way.
4. Add in minced garlic, smoked paprika, ground cumin, rice, and salt to taste. Stir until combined.
5. In a 13×9 inch baking dish, add zucchini boats flesh side facing up. Scoop the ground beef mixture into the “boat” part of the zucchini.
6. Pour the red enchilada sauce over the filled zucchini boats.
7. Cover the baking dish with tin foil. Bake for 20 minutes at 350.
8. Remove the tin foil from the pan. Bake for another 5 minutes uncovered.
9. Garnish with fresh cilantro and avocado. Serve.
