    1.25 cup PC Organics Quick Oats (by LYNNHEATLEY)
    0.75 cup King Arthur 100% Unbleached White Whole Wheat Flour
    1.5 tsp Arm & Hammer Baking Soda (by SCOTIANRUNNER)
    1.5 tsp Cinnamon, ground
    0.5 tsp Nutmeg, ground
    0.25 tsp Salt, Sifto Table Salt (by FAREWELLBC)
    5 tbsp Coconut, shredded sweetened
    2.15 tbsp "LouAna" Pure Coconut Oil
    1 serving Egg white, large
    1 tsp Vanilla Extract- Pure (Publix) (by CHYNADAHLL)
    1 serving Maple Syrup - Maple Grove Farms Pure Maple Syrup (1/4 cup)
    0.30 cup Lucerne skim milk (by PARCHIECA)
    3.9 oz Carrots grated (1 cup). (by LIZZBLIZZ4)

Directions

Mis together oats, flour, baking soda, cinnamon, nutmet, salt and coconut. Grate carrots, set aside. Melt coconut oil, let cool a bit. Add the vanilla and the egg. Beat together. Add the maple syrup (warm to room temp and skim milk. Stir into dry ingredients. Stir in grated carrots. Mix well. Line cookie sheet with parchment paper, drop dough by large spoonfuls on to sheet. Bake at 325 for 14-15 minutes.
