Introduction

This can be a side dish but I like it as a nice meal in hot weather. It comes together quickly and without too much fuss. This can be a side dish but I like it as a nice meal in hot weather. It comes together quickly and without too much fuss.
Number of Servings: 8

Ingredients

    1 lb rotini
    1 head of broccoli, cut into florets
    1 cup frozen peas
    1 10 oz package Tyson Grilled Chicken Strips
    1 14 oz can artichoke hearts, quartered
    1 8 oz can sliced water chestnuts
    1/2 cup light Ranch dressing
    1/4 cup light balsamic vinaigrette

Directions

Cook the pasta according to the directions on the package. When there is 2 minutes left of cooking time, throw the broccoli in with the pasta.

Put the frozen peas in the bottom of a colander and drain the pasta and broccoli. Place into a large bowl and add the chicken, artichokes, and water chestnuts.

Blend the ranch and vinaigrette. Pour the dressing over the salad and toss.

This will serve 6-8 if served as a main dish.
