Introduction

I adapted this recipe from Jessica Seinfeld's book Deceptively Delicious. It suits both mine and my kids needs. The cookies come out extrememly moist. Ingredients

    Whole Wheat Flour, 1 cup
    Oats-old fashioned, 1 cup
    Baking Soda, 1 tsp
    Salt, 1/2 tsp
    Cinnamon, ground, 1/4 tsp
    Margarine-like spread, 6 tbsp
    Splenda Brown Sugar Blend, 8 tsp
    Zucchini, 1/2 cup, mashed
    Banana, fresh, 1/2 cup, mashed
    1 Egg white
    Blueberries, dried, 4 tbsp (or raisins) optional
    Walnuts, 1 oz (14 halves) optional


Directions

Preheat oven to 350 degress. Mix all the dry ingredients in a separate bowl. Cream margarine and sugar in another bowl. Add the banana, zucchini, and egg white and combine. Add the dry indgredients to the margarine mixture. Add the blueberries (or raisins), and walnuts. Mix well. Drop by spoonfuls onto two cookie sheets, making 24 separate cookie mounds. Bake for 12-15 min.
