Ingredients

    2 c. Whole Wheat Spaghetti, cooked
    4 Tbsp. White Onion, chopped
    1 Tbsp. Extra Virgin Olive Oil
    1 Roma Tomato, diced (remove guts)
    1 Tbsp. Cilantro, chopped
    1 clove Garlic, chopped
    3 oz. Smoked Salmon, shredded
    2 Tbsp. Parmesan Cheese, shredded

Directions

Cook spaghetti according to directions on box.
In a skillet, sauté the onions with olive oil until almost soft. Add the tomato and cilantro; cook for another minute. Then add the garlic and salmon; cook an additional minute to warm the salmon and meld the flavors. Serve over the spaghetti with a little parmesan cheese sprinkled on top.
Also, good over fresh spinach leaves instead of pasta. This will help cut calories!

    Incredible!
    very yummy. I altered it slightly. Doubled sauce and pasta to serve 4.

    used 1 cup chopped spinach (didnt have basil or cilantro) I did not double the salmon (only used 3 oz). Added water to make more sauce and meld flavors.

    Added 2 heads of broccoli florets to the pasta as it cooked.
