Ingredients

1 lb chicken
1 can tomatoes
1 cup enchilada sauce
1 medium onion, chopped
1/2-1 cup green chilis from can
2 cloves garlic
32 oz of chicken broth, natural or low sodium are good choices
1 tsp cumin
1tsp chili powder
1 tsp salt
1/4 tsp pepper
1 bay leaf
2 cup frozen corn
2 tbsp fresh chopped cilantro
Directions
In crock pot, place all ingredients except fresh cilantro. Cook on low for 8 hours or on high for 3. About an hour before serving chop or shred chicken. Immediately before serving stir in cilantro.
There are optional toppings which would all effect calories. The first would be to bake tortilla strips to top soup. Other options would be cheese, sour cream, or green onions. Heat can be added with chopped jalepenos or lessened by lessening green chili amount.
Pick your enchilada sauce carefully to avoid higher sodium amounts. And of course if you are watching sodium you could eliminate the salt and add extras of other spices, and could choose low sodium broth.
