Ingredients

    3 Tbsp unsalted butter
    3 large ripe peaches
    1/4 c sugar plus 1 1/2 tbsp
    1 c flour
    1 tsp baking powder
    1/2 c half and half
    1/4 c nonfat milk
    1/2 tsp vanilla
    dash cinnamon

Directions

Preheat oven to 375.
Place butter in 9 x 9 baking dish and set in oven to melt.
In a medium sized bowl, mix flour, 1/4 c sugar and baking powder together and form a well.
Pour milk, half and half and vanillla into well and stir mixture together with a fork until a batter forms.
When butter is melted, take out of oven and cut peaches into bottom of pan to cover. Sprinkle remaining Tbsp and a half of sugar over peaches, dust lightly with cinnamon and pour batter over all.
Bake for 40 minutes or until crust is golden brown and peaches are bubbly.
Allow to cool.

Makes 12 servings.

    Mine didn't turn out fantastic because the peaches were really tart and the batter was a bit thick. A couple of mods next time! - 8/20/09
