Introduction

Here I go again, making dishes that taste so sinful, but are not... My family loves these dishes, they don't even realize they are eating healthy!! This alfredo dish is really good, you have got to try it!! Here I go again, making dishes that taste so sinful, but are not... My family loves these dishes, they don't even realize they are eating healthy!! This alfredo dish is really good, you have got to try it!!
Number of Servings: 12

Ingredients

    6 cups rotini pasta
    3 tbsp minced garlic
    non-stick pan spray
    2 cups sliced onion
    2 bell peppers (abt 1.5 cup)
    1 cup sliced carrots
    1 cup sugar snap peas
    1 cup mushrooms
    1 cup cucumber
    1 jar Ragu Cheesy Alfredo Light
    1 cup 1% milk
    2 cups shrimp
    2 cup crab meat (i use the imitation)
    salt & pepper to taste

Directions

Cook pasta as directed, drain. You don't want the pasta too smooshy, I prefer it not quite done.
Set pasta aside.
Spray non-stick skillet with pan spray, and put on medium heat.
Add 3 tbsp minced garlic to pan
Add onion, peppers, carrots, and peas to pan, keep in mind, you are stir frying without any oil, so you need to make sure your heat is low, and splash the pan with water occasionally when it gets dry. My onions and green peppers are frozen, so they add the little bit of moisture I need to keep the pan from scorching.
Cook these veggies till about half done...
Add mushrooms, cucumber, shrimp, and crab... cook till almost done, just a few min is all.
Add alfredo sauce, and continue on low heat till the sauce is hot.
Take the milk, and pour into the jar, shaking till the jar is clean of extra sauce, and add to pan as well, this keeps you from having to use more than one jar of sauce, and yet you still get a creamy dish.
I add salt and pepper to the milk/sauce before pouring in, so you can see it, without overdoing it, and it gets mixed in better that way.
Run cold water over the pasta, to loosen it up.
Stir in pasta, a little at a time, till all pasta is added.
By this time, sauce should be hot, and it's done.
Makes 12 - 1 cup servings
