Introduction

My mom used to make a cheesey spanish rice as a child and I never knew a recipe. I thru together some ingredients today and it is quick, easy and YUMMY! Enjoy. Ingredients

    1 med Onion chopped
    1 med Green Pepper chopped
    1 clove Garlic minced
    1 T Butter
    1 c Brown Rice
    3/4 c Fat Free Chicken Broth
    1/2 c Water
    1 14 oz can of Diced Tomato with Basil, Garlic and Oregano
    1 16 oz can Kidney Beans
    1 1/2 t Salt
    1 t Chili Powder
    2 oz 2% Velveeta Cheese

Directions

Chop onion and green pepper and saute in 1 T butter for a few minutes. Add the rest of the ingredients leaving the velveeta cheese out til the end. Cook for 10 - 15 minutes covered at a low simmer. Cube velveeta cheese and stir in at the end.
