Introduction

This is a great side dish for any occasion where little color and great taste are necessary. This is a great side dish for any occasion where little color and great taste are necessary.

Ingredients

    1 large eggplant, 3 tbsp of EVOO, salt and pepper to taste, 2 cups of mozarella cheese.

Directions

Slice large eggplant into quarters, spread on a thin layer of EVOO, salt and pepper to taste. Lay out on a broiler and broil til soft, then add sprinkles of mozzerella cheese and let melt.
