Introduction

This makes 3 pies with a lattice top plus a bit left over the way I made it. If you don't roll it that thin, you may need to figure a bit more on the nutrition per serving. Ingredients

    2 cups all-purpose flour
    1 cup fresh twice ground white wheat (prairie gold is what I use)
    1 cup butter
    1 tsp. salt
    1 T. cider vinegar
    cold water

Directions

Combine flours, and salt. Cut in butter with a pastry blender. Place vinegar in a clear measureing cup. Add enough water to make 1/2 cup. Add water mixture gradually tossing with a fork to mix. After water is all added, press together with your hands, if it needs more water add some now. Divide into four balls. Roll out three of them thinly and place into 9-inch pie pans. Take any scraps from the pies and the remaining ball of dough and roll out thin and cut into 1/4" strips. Make a lattice crust on top of the fruit filling by putting 5 strips one way and 5 the other way, weaving them is you wish or just placing on top of the first strips. Makes 3 pies with a little dough left over.
