Ingredients

    1 pound ground beef
    1/4 cup onion, chopped
    5 cups whole wheat rotini, uncooked
    1 (14.5 oz) can diced tomatoes
    1 (6 oz) can tomato paste
    1 package (10 oz) frozen spinach (thawed)
    1 (24 oz) jar tomato pasta sauce
    1 cup water
    1/2 tsp pepper
    1 tsp oregano
    1/2 tsp garlic powder
    1 cup shredded mozzarella cheese
    20 oz Cottage Cheese, 2% Milkfat

Tips

Feel free to add other spices to liven it up!


Directions

Brown the ground beef and onions over medium heat in large skillet. Drain the beef when cooked through

Add rotini, diced tomatoes, tomato paste, spinach, pasta sauce, water, and spices. Stir and cover. Reduce heat to medium low. Cook until pasta is al dente (15-20 minutes)

Stir in cottage cheese. Sprinkle mozzarella cheese over the top. Cook until mozzarella cheese is melted. Serve
