Introduction

Quick and easy hearty mushroom rice soup. Quick and easy hearty mushroom rice soup.
Number of Servings: 10

Ingredients

    2 tbsp Extra Virgin Olive Oil
    2 cup, sliced cremini Mushrooms
    1 cup, chopped Onions
    6 cup low sodium chicken broth (can use veggie broth instead)
    3 cloves Garlic, crushed
    1 cup Long Grain and Wild Rice Blend
    1 Bay Leaf
    1 tsp Thyme
    1 cup Light Cream (coffee cream or table cream)

Directions

Sautee onions, mushrooms, celery and carrots in olive oil until beginning to soften. Add in crushed garlic and sauté for one more minute. Add in stock, rice and bay leaf. Bring to a boil and then reduce heat to a simmer until rice is cooked (about 25-30 min). Remove bay leaf. Add in cream and thyme. Season with salt and pepper to taste. Serving Size: Makes 10 1-cup servings
