Number of Servings: 12

Ingredients

    1 C Old Fashioned Oatmeal
    1/2 C sour milk
    3 over ripe bananas
    1 C sugar
    2 large eggs
    1 C white flour
    1 tsp baking soda
    1/2 tsp baking powder
    1/2 tsp salt
    1/2 tsp vanilla
    1/2 C chopped walnuts
    (1/2 C mini choc chips optional)

Directions

Soak oatmeal in sour milk for about an hour. Add bananas and mash them, add eggs and sugar and blend well. Add dry ingredients, blend well. Add vanilla and nuts. Stir. Bake at 350 for one hour. Makes 1 loaf.

    Very Good
    I ended up with more than 12 muffins, but found this really good. I may tweak it the next time I make it to find a way to add more fiber. - 9/17/08
