Introduction

From my friend, Sarah -- this is oh so good!! You may substitute seafood for chicken.... prawns, scallops, calamari, abalone also you can use pre-made margarita mix with the Jose Cuervo. Ingredients

    6 boneless chicken breasts
    3 tbsp cilantro, chopped
    1/2 cup of tequila
    1 medium yellow onion chopped
    1 chopped Serrano peppers
    1/2 cup of lime juice
    1/2 cup of triple sec
    2 medium tomatoes
    3 cloves garlic crushed
    2 tbsp olive oil
    4oz whole butter
    salt and pepper to taste

Directions

Add olive oil to a sauté pan and heat over high heat. Place chicken breast in oil and cook 3 to 4 mins per side. Drain the oil add tequila- watch out for flames. After alcohol has burned off add lime juice, triple sec and garlic, let this reduce by half. Add the tomatoes, onion, Serrano peppers and cilantro. Cook until vegetable mixture is tender, add the butter. Reduce the heat and cook until butter is incorporated into sauce. Season with salt and pepper. Serve immediately.
