Introduction

Ingredients

    1 cup Zuchinni, grated
    1.5 cups bananas, mashed (about 3 bananas)
    1 egg
    1 tbsp veg oil
    1/2 cup unsweetened applesauce
    1/4 cup sugar substitute like Splenda
    1.5 tsp baking powder
    1.5 tsp baking soda
    1.5 cups whole wheat flour
    1 cup quick cooking oats
    1/2 tsp salt

Directions

1. Oven at 350F
2. Spray muffin tin
3. Mix banana and zucchini. Add Sugar Substitute, egg, oil, applesauce.
4. In seperate bowl combine dry ingredients
5. Add dry to wet until just combined
6. Bake 25-30 minutes
7. Let rest for 5 min then cool on rack.

    Very Good
    I added cinnamon (1 tsp) when I made it. I was definitely glad to have that extra flavor. I will probably add a little more cinnamon and some nuts next time. - 8/1/09
