Introduction

Ingredients

    1 medium onion, diced (about 1 cup)
    1 tbsp olive oil
    1 tsp minced garlic
    12 oz beef, turkey, or a combination (this instance, I used 6.7 oz turkey and 5.3 oz beef - both extra lean)
    1 can diced tomatoes, with juice
    2 carrots (about 4.5 ounces, weighed) sliced
    French's Beef Stew Seasoning Mix
    4 cups water
    1/2 c Quaker Quick Pearled Barley

Directions

Mix Beef with Turkey and set aside. Saute onions in olive oil until translucent. Add garlic and cook 1 minute or until fragrant. Add meat and cook until brown completely. Stir and break up while cooking. If necessary, drain excess fat. Put meat/seasoning mixture, corn, tomatoes, carrots, water and seasoning mix in crock pot. Stir to mix. Cook on low, 8-10 hours. Add barley last hour of cooking. May need to add more water after barley is added.

Note: check crock pot occasionally if more liquid is needed. Some crock pots make a lot of liquid, some do not. You can add more water or beef broth.
