This goes with the Chipotle Marinated Pork I posted separately. I found the recipe on Cooking Light. You can have less calories by having less. Ingredients

    1 cup fresh flat-leaf parsley leaves
    1/4 cup fat-free, low-sodium chicken broth
    2 tablespoons extra-virgin olive oil
    2 tablespoons white wine vinegar
    1/2 teaspoon dried oregano
    1/4 teaspoon salt
    1/8 teaspoon freshly ground black pepper
    6 garlic cloves
    1/2 cup shredded carrot
    1/2 cup minced fresh onion

Directions

Combine parsley and next 7 ingredients (parsley through garlic) in a blender; process until smooth. Pour into a bowl; stir in carrot and onion.

Serve over meat (pork, beef even chicken).
