Introduction

My husband and daughter just love this salad. The Rosemary is such a great addition.

Great in sandwiches or placed on a bed of lettuce and topped with a dash of Balsamic Vinegar.

Ingredients

    1# chicken breast, boneless/skinless
    1 cup Craisins
    2 cup Kraft Light Mayonnaise
    2 tbsp garlic, minced
    1 tsp salt
    1/4 tsp ground black pepper
    2 tbsp fresh Rosemary leaves, torn in small pieces

Directions

Bake chicken breast in 350 degree oven for 25 minutes. Remove from pan, pat with paper towel and set aside to cool.

When chicken has cooled, place Craisins in small bowl and fill with warm water just until berries are covered. Soak for 20-30 minutes to soften.

While berries are soaking, dice chicken into 1/2 inch pieces.

Place cubed chicken, mayonnaise, garlic, salt, pepper and Rosemary in large bowl .

Drain berries and add to chicken mixture. With mixing spoon, fold all ingredients together until well combined.

Cover with plastic wrap, or if using plastic container with lid, place lid on container, and refrigerate for an hour to blend flavors before serving.
