Introduction

Ingredients

5 cups cooked brown rice (basmati is best)
3 medium squash, zucchini and/or yellow
1 medium onion diced
1 clove garlic
1 red pepper cut into short strips
1 block extra firm tofu
1 cup nonfat milk
1tbsp. butter
1tbsp. flour, white or whole wheat
1 tblsp curry paste
4 tblsp curry powder
salt to taste
Directions
1. Melt the butter in a saucepan, add the flour to make a paste, then add the milk and cook until thickened into a white sauce.
2. When sauce is thick, add curry paste, mix well, and turn off heat.
3. Spray a nonstick skillet with Pam, heat to medium high, and add vegetables and tofu. Sprinkle with 2 tblsp. of curry powder while cooking.
4. When vegetables are crisp/tender, add the cooked rice and 2 more tbsp. of curry powder. Stir ingredients in skillet well to mix.
5. Add the curry sauce mixture from the saucepan and mix well.
6. Heat through and serve.
