Ingredients

3 cup Flour - Gold medal all purpose flour
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Cinnamon, ground
1 tsp Nutmeg, ground
1 cup, chopped Pecans
.75 cup Canola Oil
3 large Egg, fresh, whole, raw
2 cup Granulated Sugar
14 tsp Vanilla Extract
4 cup, sliced Zucchini
Tips
Good to freeze and reheat.
Directions
Spicy Zucchini Bread
3 Cups Flour
1 Tsp. Baking powder
1 Tsp. Baking Soda
1 Tsp. Ground Cinnamon
1 Tsp. Ground Nutmeg
1 Cup Chopped pecans (or Walnuts)
Combine first 6 ingredients in a mixing bowl making a well in the center of the mixture.
¾ Cup Vegetable Oil
3 Eggs
2 Cups Sugar
2 Tsp. Vanilla Extract
Combine oil eggs, sugar & vanilla; mix well.
3 Cups Unpeeled shredded zucchini
Stir in shredded zucchini.
Add mixture to dry ingredients, stirring just until moistened.
Spoon mixture into 2 greased & floured 8 ½ inch X 4 ½ inch X 3 inch loaf pans.
Bake @ 350 degrees for 1 hour. Cool loaves 10 minutes in pan; remove to wire rack and cool completely.
Yields 2 loaves.
Can slice and place in toaster.
