Ingredients

    1 cup Blueberries, fresh, raw per 1 cup (148g)
    0.8 grams Xanthan Gum - Hodgson Mill (0.8gram/.25tsp) (by J_MCC_85)
    .33 tbsp Erythitol
    1 tbsp Vanilla Extract
    1 serving Lemon juice - of half lemon, 1 Tablspoon (Atkins)
    2.64 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    2 tbsp Butter, salted
    2 tbsp Erythitol
    .5 serving Lemon juice - of half lemon, 1 Tablspoon (Atkins)

Tips

The macros are not exact to Low Carb Spark where I got the recipes. the vanilla extract probably is the cause because I picked it from Fat Secret.


Directions

#1- Preheat the oven to 375 F /190 C. #2-In a bowl add 1 cup of blueberries, xanthan gum. sweeterner and lemon juice. Mix until the blueberries are well coated. #3-Equally distribute the blueberry mixture between 4 small ramekins. Set aside #4-For the cobbler: Combine the melted butter, almond flour, keto sweetener and lemon juice until yu get a crumbly dowgh as shown in the video.( on you tube) #5 Crumble the dough over the blueberries mixture. #6 Bake in the preheated oven for 15-18 minutes until the crust gets a lovely golden brown color. #7- Serve hot topped with Keto ice cream or whipped cream.
