Introduction

This was something that I put together by accident and it turned out to be extrememly yummy and light for summer. This was something that I put together by accident and it turned out to be extrememly yummy and light for summer.
Number of Servings: 4

Ingredients

    2 Double Chicken breasts - Skinless/boneless works best

    Juice from 2 limes - 1 for marinade and 1 for salsa

    2 handfuls of cilantro (NOT parsley) - chopped 1 handful for marinade and 1 handful for salsa

    1 Onion (Red, white or both if you like) - chopped - 1/4 for marinade and 3/4 for salsa

    1 Mango - chopped for salsa only

    1 green pepper - chopped for salsa only

    A couple cloves of garlic smashed and chopped for marinade

    A couple of shakes of Tabasco to go into marinade for the kick

    2 TBSP of Olive Oil for the salsa only

Directions

Marinade chicken for at least 1 hour with the following:
juice of 1 lime
1 handful of chopped cilantro
1/4 cup of red/white/both onions
2 cloves of chopped garlic
A couple shakes of Tabasco (optional or to liking)

In a separate bowl make salsa by mixing:
1 chopped up mango
1 chopped up green pepper
3/4 cup of red/white/both onions
2 TBS Olive Oil
Juice with bits of 1 lime

Grill on medium heat or bake at 350 for approximately 30-40 minutes or until chicken is done in the middle. This makes 4 servings that are approximately 4-6 ounces each depending on the size of the chicken.
