This is a hearty, super yummy casserole. The recipe has been in our family for generations and is a popular request for birthday dinners and other family get-togethers. It is definitely a once in a while only treat as it's not a low- calorie meal. This is a hearty, super yummy casserole. It is definitely a once in a while only treat as it's not a low- calorie meal.

Ingredients

    16 oz 80/20 ground beef chuck
    1 medium (2-1/2" dia) Onions, raw
    1 cup pieces Mushrooms, fresh
    2 cup Tomato products, canned, sauce, spanish style
    Tomato paste, 6oz.
    1.5 cup Egg Noodles, unenriched
    1 package, small (3 oz) Cream Cheese
    1 cup Sour Cream
    3 serving Green Onion (fresh-1 stalk)
    1.5 cup Colby and Monterey Jack Cheese shredded
    Italian seasoning
    Calorie free cooking spray

Directions

Grease a 9x13 pan with calorie free cooking spray in preheat oven to 350° f
1. Saute mushrooms and onions and calorie-free cooking spray until soft, then set aside
2. Brown the ground beef and then drain
3. Add tomato sauce tomato paste and veggies to the ground beef
4. Add Italian seasoning and salt to taste then simmer for 10 minutes
5. Meanwhile, cook the egg noodles, following package instructions
6. Once noodles are cooked and drained, return to pan and add cream cheese, sour cream and green onions while noodles are still hot
7. To assemble the casserole, first add half of the ground beef mixture to the bottom of your 9x13 pan, then half of the egg noodle mixture on top of that, finish with a layer of half of the cheese. Repeat steps one more time.
8. Cover with aluminum foil and bake for 30 minutes or until all cheese is melted
