Ingredients

    1 Tablespoon Extra Virgin Olive Oil
    1 onion, chopped
    4 cloves garlic, minced
    1 carrot, chopped
    1 stalk celery, chopped
    4 fresh sage leaves
    6 cups chicken OR vegetable stock
    2 cans white kidney beans (cannellini) drained and rinsed
    4 cups shredded kale
    salt and ground pepper

Directions

In a large soup pot, heat oil over medium heat. Add onion, garlic, carrot, sage(4 leaves) Cook 5 minutes. Add stock beans, kale, salt and pepper. Cook stirring occasionally about 20 minutes or until kale is tender.
