Introduction
Mary Berry recipe with alterations:-added spices
-substituted walnuts with half and half walnuts/sunflower seeds
-approx 80ml-90ml sunflower oil instead of 150ml
-less sugar than called for
-wholemeal flour instead of plain
-added raisins
-no frosting, instead small amount of icing drizzled over the top (made with icing sugar and orange juice)

Ingredients

8oz wholemeal self raising flour
2 tsp baking powder
4oz golden caster sugar
1oz chopped walnuts
1oz chopped toasted sunflower seeds
4oz grated raw carrot
2 ripe medium bananas, mashed
2 medium eggs
1tsp cinnamon
1tsp mixed spice
1/2 tsp ginger
80-90ml sunflower oil
1/2oz raisins
15g icing sugar
approx 1tsp fresh orange juice
Directions
Add all ingredients into bowl and mix together. Cook for 50min - hour.
Mix together icing sugar and orange juice and using a spoon drizzle over the top.
Makes one 20cm diameter cake, pretty deep as well - cut into 10 generous wedges.
