this a recipe I have used for 50 years. A little time consuming but well worth it. Ingredients

    3 cup White Rice, long grain, cooked
    6 cup Milk, 1%
    9 serving Sugar - Artificial Sweetener - ( to equal 6 tablespoon sugar)
    1 envelope, Tbsp, 12g Knox gelatin
    2 cup, crushed, sliced, or chunk Pineapple, canned or 20 oz can
    1 tbsp Cinnamon, ground
    1 tsp Salt (table) (by CYNDYY1)

Tips

when my family were home I would cook extra rice so that I would have on hand.


Directions

Place cooked rice, sweetener, salt, and milk in large sauce pan (crock pot on low work great.) Cook on low heat stirring periodically until mixture is thick and creamy. Pour into a 9"x 13" dish. let cool. mean while add pineapple ( I like crushed or tidbits) with juice. Add a little water to make 2 cups liquid. follow directions for unflavored gelatin. put all in pan including cinnamon bring to boil, cool slightly then pour over rice mixture. Cool until set. this will make 12 large servings or 16 smaller
