- 1/4 cup Cheese - Mozza/Cheddar - Shredded
- 2.25 cup Egg Whites
- 0.5 oz Spinach - Raw
Salt and Pepper to Taste
Directions
Preheat Oven 400F/200C
Tip: Suggest using a silicone muffin tin, for easy cleanup and putting the silicone muffin tin on a cookie sheet, to prevent any of the mixture spilling in the oven.
Lightly grease muffin tin (6 portion tin) with butter and set aside.
Chop up Spinach small enough so it fits better inside the muffin tin.
Add spinach and cheese to muffin tin gently press down.
Pour egg whites over mixture.
Place muffin tin in the preheated 400F/200C oven and bake for 15 - 20 minutes. The muffins will rise in the oven while baking and after taking the egg muffins out of the oven and once cooled they will deflate.
Store them in a glass or plastic container in the fridge. Its the perfect grab and go breakfast each morning.
Warm them in the microwave for 30-45 seconds when you want to enjoy one.
