Ingredients

    4 serving Kodiak Pumpkin Flapjack Waffle Mix
    8 oz Almond Breeze Almond Milk, Unsweetened Vanilla
    1 large Egg, fresh, whole, raw
    .5 cup Splenda Granular for Baking (by MLHALF)
    0.75 cup Libbys 100% pure pumpkin, canned
    .25 cup Applesauce, unsweetened
    1 tsp Vanilla Extract
    .5 tsp Salt
    1.5 tsp Pumpkin Pie spice
    .5 tsp grated orange peel (by CHUCKLES0719)

Tips

If you can't find Kodiak Pumpkin flavor (usually only available in the fall), you can use Buttermilk or Cinnamon Oat and add a bit more pumpkin pie spice

You can make smaller muffins and get 12 out of the recipe; I happen to like them a little bigger


Directions

Preheat oven to 350. Combine wet ingredients together. Combine dry ingredients together. Stir wet and dry ingredient together.
Line muffin tin with liners and spray with nonstick baking spray. Fill 10 tins with muffins. (You can fill the remaining two with water to keep pan from burning)
