Ingredients

16 oz Beef, 85% Lean, Hamburger
1 large Onions, raw
1 Tbsp Chili powder
1 can (14.5 oz) Yellow Sweet Corn, Canned or Frozen
1 can (14.5 oz) Hunt's Diced Tomatoes, Canned
6 Mission corn tortillas Restaurant Style (6 inch diameter)
1 cup, shredded Cheddar Cheese or Shredded cheese of your choice
Directions
Brown ground beef, chopped onion and chili powder.
Add drained can of corn and undrained can of diced tomatoes.
Heat thoroughly, about 5 minutes.
Place 1 cup of meat mixture in a 2 qt. round casserole dish.
Place 3 tortillas on top.
Place 2 cups of meat mixture on top, then 1/2 cup cheese.
Place 3 tortillas on top.
Place rest of meat mixture.
Cover and bake for 25 to 30 minutes at 375 degrees F.
Uncover and add rest of cheese.
Bake for 5 minutes until cheese is melted.
Service with sour cream, if desired,
(but not included in nutritional calculations)
