Introduction

This is my mother's recipe for rhubarb pie. If you can find anything to substitute for Crisco in the crust that would decrease the fat and calories, go for it! I haven't been able to find a healthy substitute for the Crisco yet. This is my mother's recipe for rhubarb pie. Ingredients

    Filling:
    6 c diced rhubarb
    1 c flour
    2 c sugar

    Crust:
    3 c sifted flour
    1 tsp salt
    1.25 c shortening
    8-10 tbsp cold water

Directions

Assemble filling and set aside in a warm location to juice.

Mix crust ingrediants and make crust for 9-inch round pie plate.

Assemble pie.

Cover edges of pie crust with aluminum foil or edge cover. Bake at 450 deg F (235 deg C) for approximately 30 minutes or until crust is golden brown. Remove crust coverings and bake for 10 minutes or until crust is of desired brownness.
