Ingredients

2 pounds or maybe 6 large potatoes
1 1/4 C Mayo (you could do half with miracle whip)
1 T mustard
1/2 t Salt
1/4 t Pepper
1 C chopped celery
1/3 C chopped green onion
1/2 chopped sweet pickles (or relish)
1 T pickle juice (if you didn't use relish)
6 hard boiled eggs
Paprika (optional)
Directions
Place potatoes in a medium saucepan; add water to cover and bring to a boil. Reduce heat and simmer, covered for 20-25 minutes or til tender. Drain well; cool slightly. No need to peel. Cube potatoes.
In a large mixing bowl combne the mayonnaise, mustard, salt and pepper, celery, onion, and pickles. Add the potatoes and eggs. Toss lightly to coat. Cover and chill. Chill for 6-24 hours. Save one egg and slice on top and cover with paprika.
