Ingredients

    16 oz ground turkey, 93% lean
    6 Medium Russet Potatoes, thinly sliced
    1 cup low fat cheddar or colby cheese, diced
    1 cup carrots, chopped
    1 cup onions, chopped
    2 large eggs, fresh
    1 cup nonfat milk

Directions

Brown onion, carrots, and ground turkey in large skillet.
Thinly slice potatoes and put a layer on the bottom of cassarole dish (9x13). Reserve rest of potatoes for top of cassarole.
Place turkey mixture into large casserole dish on top of potato layer, and add remainder of sliced potatoes on top.
Sprinkle with grated cheese.
Whisk egg substitute and milk and pour over the top.
Bake at 350*F for 40 minutes or until the cheese is melted and slightly browned and potatoes are easy to fork.

    This came out very runny -- I may not have used enough potatoes, or the 1 cup milk should be less. But the flavor was good (I added seasonings) & my husband and son both liked it a lot. - 10/10/08
