Introduction

This is a great recipe that I got from a cookbook I found in Canada, "Cooking foods that fight Cancer". This is a great recipe that I got from a cookbook I found in Canada, "Cooking foods that fight Cancer".
Number of Servings: 4

Ingredients

    1 tsp olive oil
    1 large onion, chopped
    2 or 3 garlic cloves according to taste
    1 tsp ground turmeric
    2 tsp ground cumin
    2 1/4 cups stewed canned tomatoes
    Salt and freshly ground pepper
    4 eggs
    1/4 cup fresh coriander (cilantro), chopped

Directions

Heat olive oil in a large skillet, and sweat the onions and garlic until they are translucent.

Add the turmeric and cumin, and stir for 1 to 2 mins.

Add the tomatoes, and season to taste. Simmer for approx 20 mins, until the mixture thickens.

Make four "nests" in the mixture, and crack one egg into each nest*

Continue cooking until the egg whites are cooked

Garnish with fresh coriander and serve.

*Directions say not to break the joke at this point, but scramble mine a bit and make sure they cook all the way through, do what tastes good.

    What a great way to add an egg to your meal! Loved it, I just added broccoli to the mix and let it cook a bit before adding the egg. - 1/28/19
