Introduction

This is a slight variation of another recipe I happened to find, and it's delicious! This is a slight variation of another recipe I happened to find, and it's delicious!
Number of Servings: 10

Ingredients

    1 lb. lean ground beef
    1 package taco seasoning (with 2/3 cup water)
    2 tbsp. cumin
    2 tbsp. red pepper (if desired)
    1 cup white rice (with 2 cups water)
    Diced onion
    Diced green pepper
    Diced tomato
    Diced jalapenos (if desired)
    butter or margarine (enough to flavor & grease pan)
    3 tbsp. minced garlic
    1 can corn, drained
    1 can black beans, drained
    10-20 green olives, sliced into thirds
    enchilada sauce
    Mexican cheese, shredded

Directions

Brown ground beef. Add taco seasoning and water, and simmer for 5 minutes. Cook white rice (boil until soft & water is gone). Saute diced onion, green pepper, tomato, and minced garlic in pan with butter or margarine until tender. Add cumin for flavor. Pour enchilada sauce into approx. 9x13 baking dish. Stir in corn, black beans, sliced green olives, and ground beef. Gently stir in cooked white rice. Bake at 350 degrees for 35 minutes. Sprinkle with Mexican cheese as desired.

*Add jalapenos and red pepper to mixture before stirring and baking only if desired (to add an extra kick).

Makes approx. 10 1-cup servings.
