Ingredients

2 green bell peppers
1 lb. ground beef, lean
Spanish Rice mix, 5.6 oz dry
Picante Sauce
Cheddar cheese
Directions
Serves 2 people
Rinse bell peppers, cut tops off to create a cup like shape. Rinse seeds out. Place in steamer and steam to desired tenderness.
Make Spanish rice according to package directions. In a seperate pan, brown ground beef, rinse and drain. Mix Spanish rice with ground beef mixture. Take peppers out of steamer, turn upside down to empty of excess moisture, fill each pepper with about 3/4 Cup of the mixture. Top each stuffed pepper with some shredded cheddar cheese. Place peppers in microwave at the same time for two minutes. Let set for just a minute before eating, contents will be very warm. Enjoy!
