Introduction

This is a favorite dish in our house. I usually serve it with vegetables. You can also make this with fish, which is also good. This is a favorite dish in our house. I usually serve it with vegetables. You can also make this with fish, which is also good.
Number of Servings: 4

Ingredients

    1/2 cup of butter or margarine
    2/3 cup of crushed crackers
    1/4 cup grated parmesan cheese
    1/2 teaspoon basil
    1/2 teaspoon oregano
    1/2 teaspoon salt
    1/4 teaspoon garlic powder
    1 pound boneless, skinless chicken breasts
    or 2 pounds of fish
    (Can also use a whole chicken cut up)

Directions

Preheat over to 350.
Mix together spices, parmesan cheese and crushed crackers.
In 13x9 pan melt butter and dip chicken in the butter and then put in crushed cracker mix, coating both sides of chicken.
Put in baking pan in center of oven.
Bake 30-45 minutes or until chicken is no longer pink or 25-30 minutes for fish.

One serving is 1 chicken breast or on piece of fish.

    This was really good. The family enjoyed it. I did make the mistake of baking the chicken in the same pan that I melted the butter in instead of a new baking pan. This made the chicken really buttery. I will make this again. - 12/7/08
