Introduction

Ingredients

    2 tbsp cup flax seed meal
    1/2 teas. baking powder
    1 packet Splenda
    1 teas. cinnamon
    1 large egg
    1 teas. butter, melted (I use Smart Ones Buttery Spread)

Directions

Mix dry ingredients in a mug or a bowl (like a cereal bowl), add butter and egg and mix well. Microwave for 1 minute on high.

    Very Good
    Am doing Zone diet. Craving something bready & chocolatey. Made this muffin, as stated, but adding 1 tsp cocoa powder (1 carb) & 10 choc chips (3 carbs). It was very good and hit the spot, albeit a little dry. Next time I'll omit the cinnamon & add a little more butter. Great for low-carb though! - 2/23/11

    Incredible!
    I just made this without the baking powder. Guess my recipe didn't have it. It was good. Lots of fiber and low carb.
