    3 pounds Ricotta
    8 eggs or 2 cups egg beaters
    1/2 cup sugar
    1/4 cup vanilla or vanilla/almond extract combo


Beat all ingredients till smooth pour in spring pan or cup cake tins and bake at 350 till gold on top approx 35 mins
