Ingredients:
Garlic, 1 clove, Onions, raw, .5 cup, chopped, Zucchini, 4 cup, sliced, Parmesan Cheese, grated, .25 cup, Provolone Cheese, .25 cup, diced, Mozzarella Cheese, whole milk, .5 cup, shredded, Egg substitute, liquid (Egg Beaters), 1 cup, Parkay, Squeeze Margarine 4 Tbsp
Salt, 2 tsp (remove)
Pepper, black, 1 tsp (remove)
Directions
Grate Zucchini and press out exess moisture. Chop onion, mince garlic.
Melt butter in a skillet over med heat. Saute garlic and onion until translucent. Add grated zucchini, and cook out most of water. Add eggs, salt and pepper to taste and "scramble" together with cheeses.
Lower heat to med-low. Spread out evenly in pan and allow to brown slightly.
Serve 6 sides or 4 entrees.
