Number of Servings: 8

Ingredients

    1 lb lean ground beef
    1 cup chopped onion
    2 cloves chopped onion
    2 c ups zucchini, slice in half moons
    1 can yellow niblet corn
    2 cans diced tomatoes
    1/2 cup medium salsa
    3 cups white rice, cooked
    2 oz velveeta cheese
    salt and pepper to taste

Directions

In a heavy bottomed pot, brown ground beef. Add onion and garlic and cook until soft. Add zucchini, corn, tomatoes and salsa. Season with salt and pepper to taste.

Simmer for 30 - 45 minutes. Add velveeta and stir to melt.

Serve over white rice

Makes 8 1-1/2 cup servings

    This was yummy - I used ground turkey instead of beef and added a diced jalapeno, cumin, and cayenne pepper and served with tortillas (not rice). I made a half batch by using 1/2 pound turkey and 1 can of tomatoes, but leaving all the other amounts the same. I'd make this again! - 9/7/08
