Ingredients

    1 cup Cherry Tomatoes, halved
    1-2 tsp olive oil
    dash salt
    dash pepper
    1-2 tsp parmesean cheese

Directions

Preheat oven to 400 degrees. In a bowl, combine tomatoes, oil, salt and pepper. Spread evenly on a foil-lined baking sheet and roast in oven for 8-12 minutes (skin will look slightly wrinkled and may brown very lightly). Sprinkle with parmesean cheese if you like and serve warm. Makes 2 1/2cup servings.
